oaxacan wassail



Reposado Tequila, Hot Apple Cider, Cynar, Sage, Allspice


To a tempered, hot mug (see hot toddy recipe for tempering instructions), filled a little over halfway with hot cider add: 

1 1/2 oz. T.C. Craft Reposado

1/2 oz. Mezcal

1/4 oz. Cynar Amaro

1 tablespoon of light agave syrup

1 dash of angostura bitters

1 teaspoon of Allspice Dram

Stir well and garnish with a sprig of sage leaves.

To make wassail from scratch, combine these ingredients in a pot and simmer:

2 apples sliced in half and studded with 7 cloves per half apple

4 pints apple cider (Martinelli's)

1 cup orange juice

1/2 cup lemon juice

1/2 teaspoon ground cloves

1 teaspoon cinnamon

1/2 teaspoon ground ginger

1 oz. T.C. Craft Anejo Tequila (the alcohol will be cooked off)

1 tablespoon wildflower honey

2 sprigs of thyme

1 sprig of sage

-Simmer ingredients over medium high heat until the smell of the tequila burns off, then turn the heat down to medium low and simmer for 45 minutes
